If you have ever followed a diet in your life, you perfectly know that the worst part is actually the cravings, and the more you have to avoid certain food and the more you have cravings for it.  I am currently following a zero sugar diet to beat candida overgrowth, plus I am allergic to gluten, yeast, eggs, flavorings and sugar itself so normal sweets, cakes and biscuits are a NO NO for me. 

What I miss the most are actually the biscuits. I have grown up in Italy and when I was a kid the Mulino Bianco biscuits for breakfast were a must (Pan di Stelle and Abbracci were actually my favourite!). If I knew back then I was going to have so many food allergies in my adult life, I would have made the most it! πŸ˜€

And so, here I am now, vegan and on a candida diet dying to have some biscuits. There are a lot of amazing raw cakes and vegan cookies recipes around but …. did I forget to mention I am not a great cook at all? I am very clamsy in the kitchen, I burn pans every day and I am not patient at all so I need something super easy to be able to accomplish something eatable. 

I have decided to try the most basic receipe for vegan and gluten free biscuits with only 2 ingredients!: rice flour and coconut yoghurt.

  • 2 ingredients
  • 5 minutes prep
  • 15 minutes resting time
  • 20 minutes cooking time

How to make vegan gluten free and sugar free biscuits with only 2 ingredients?

For 2 people:

Mix 200 gr of coconut yoghurt with 8/9 full spoons of rice flour (the amount of flour depends on the consistency of the yoghurt, if it is very runny, add another spoon of flour) and work the mixture with your hands until you reach a soft and consistent dough, leave it to rest in the fridge for 15 minutes. Whilst you wait for the dough to be ready, pick your favourite cookie cutter (I used the Rock and Metal Fan Symbol cookie cutter that I recently got from the Entrateiment company I work for, which is actually our logo :D) and grease a baking tray with coconut oil. 

Remove the dough from the fridge and work it a little bit more, if too sticky, add a tea spoon of flour, cut it into shapes with the cutter and place the biscuits in the baking tray as you go. 

Bake for 20 minutes (25/28 if you like them crunchy) at 120 Β° and et voila’! 

Have your vegan gluten free and sugar free biscuits with orange and cinnamon tea or coconut milk hot chocolate to have the perfect balanced healthy Christmas holidays afternoon snack!
