Ginger Lime Veggies Baked Rice

The name seems long and complicated but it is, in fact, very easy! Due to my many food allergies, white rice is part of my daily diet like for some people are bread or pasta: I usually cook my fluffy rice in a pan following the traditional way but for a change, I wanted to try something new.

What you need for the Ginger Lime Veggie Baked Rice:


Preparation:

  • Preheat the oven to 160 C
  • GreaseΒ a pan suitable for oven (or a baking tray), with coconut oil
  • Add the rice and all the other ingredients (carrot and ginger previously chopped)
  • Boil 1L of water and pour into the pan, cover with the lid or foil if you are using a baking tray
  • Baked the rice for 1 hour at 200 C (or until the water is absorbed and the rice soft).

Β Serve and enjoy!
