Perfect as a vegetarian main option with white rice or as a side to go with meat or fish.

You can use any vegetables as you want and make the dish as colourful as you like!

The vegetables I have used are: potatoes, sweet potatoes, cherry tomatoes (red and yellow) and asparagus.

The preparation is super easy and you cannot go wrong with that: peel, wash and cut all the vegetables and place them in a glass container.

Add 3/4 spoons of olive oil, salt, pepper and oregano, cook for 50 minutes in the oven at 180 degrees.

Serve and enjoy! πŸ˜‹πŸ˜‹πŸ˜‹
