One of my favourite things to eat with a small bowl of cinnamon rice on the side. It is very simple but so fresh, tasty and healthy!

It is obviously inspired by Asian food, in particular, the food that I have tasted and loved in Bali and so, as soon I came back, I had to try to make my self. The result was not the same of course but anyway delicious, even my mum loved it!(and she is usually very critical about food like the rest of us Italians indeed #LOL).

Vegetables Β  Β  Β  Β  Β 
Pick some vegetable, wash them, peel them and boil them for about 15 minutes, you don’t want them too soft but still a bit hard and crunchy. Squeeze a lime in a pan, add a big piece of ginger, a couple of chillies, a stick of fresh cinnamon and a spoon of coconut oil.
When the oil is hot, add the vegetables previously boiled and stir for few minutes.

*The vegetables I have picked (the ones that you can actually see in the picture) are: Β black carrots, normal carrots, zucchini and green beans.

Cinnamon Rice
Add some basmati rice and a fresh stick of cinnamon in boiling water, cover it with a lid and let it cook it under the flame for 15 minutes.

Serve and enjoy it! πŸ™
